Nothing is as wonderfully comforting on a cold day as this low carb hot chocolate recipe!

Ingredients:

Hot Chocolate:

  • 3 tablespoons unsweetened cocoa powder dutch process
  • 2 tablespoons swerve or lakanto 
  • 2 cups almond milk
  • 1 cup heavy cream or full fat coconut milk
  • 1/4 teaspoon vanilla extract
  • pinch of kosher salt

Toppings (optional):

  • low carb marshmallows
  • sugar free whipped cream

Instructions:

  • Combine + heat. Add unsweetened cocoa powder (3 tablespoons), erythritol (2 tablespoons), salt (a pinch), almond milk (2 cups), and heavy cream (1 cup) to a small saucepan. Heat over medium heat, and whisk to combine.

  • Add vanilla extract. Once hot chocolate has reached the desired temp, remove from heat and stir in vanilla extract (1/4 teaspoon).

  • Serve warm with toppings (below) and enjoy!
