These bright and creamy yogurt popsicles are the perfect summer, with tangy, sweet flavors along with colorful hues that will have you feeling all the unicorn vibes.

Ingredients:

  • 2 Cups Fruit I used sliced strawberries and blueberries
  • 1/4 Cup Swerve or Lakanto (see sweetener notes below) granular
  • 2 Cups Greek Yogurt I use Fage or Trader Joe's brand

         Optional Mix-Ins:

  • 1/2 Cup Coconut shredded + unsweetened
  • 1/4 Cup Nut Butter Make sure your nut butter is "wet"
  • Instructions:

    • Blend fruits (2 cups) in a food processor until only small pieces remain (see photo).
    • Place fruits in a large bowl. Use a rubber spatula to stir in the erythritol (1/4 cup).
    • Add Greek yogurt (2 cups) and fold together with the fruits. If you want them to look tie-dyed, lightly swirl together -- if you'd prefer them to be a solid color, stir until well combined. Taste and add more sweetener if desired.
    • Pour evenly into popsicles molds (small Dixie cups work well here too!).
    • Toss popsicle molds in the freezer for an hour, then insert the popsicle sticks. Place them back in the freezer for another 3 hours, or until they're completely frozen.
    • Run popsicle molds under warm water to remove and enjoy!
